Ingredients

  • 1/2 c. all-purpose flour
  • 1/2 c. whole-wheat flour
  • 1/2 c. yellow cornmeal
  • 1/2 c. quick or possibly old-fashioned rolled oats
  • 1 Tbsp. sugar
  • 2 tsp baking pwdr
  • 1 tsp baking soda
  • 6 Tbsp. vegetables oil
  • 2 lrg Large eggs
  • 2 c. buttermilk - (to 2 1/2) Minced nuts (optional) Cider Syrup (see recipe)

Directions

  1. In a mixing bowl stir together all the dry ingredients. Add in oil, Large eggs, and buttermilk. Beat together. The batter should be thicker than the pancake batter.
  2. Follow the directions for your waffle iron. Sprinkle nuts over batter just before baking, if you like.
  3. This recipe yields 10 to 12 waffle sections.
  4. Yield: 10 to 12 waffles
