Directions

  1. Set oven at 350 degrees. Grease or possibly line muffin c.. Soak raisins in warm water for 30 min, then drain well.
  2. Mix flour, baking soda, sugar, cinnamon, and salt in a bowl. Stir in raisins, carrots, apples, nuts, and coconut. Beat Large eggs with oil and vanilla to blend. Stir into flour mix till just combined.
  3. Fill muffin c. 2/3 full. Bake 20-22 min till golden. Cold 5 min. Remove from pan. Makes 15-25, depending on the size of the muffin pan.

    This is close to the "It's a Good Morning Muffins" by Emerill. This is almost the adaptation of that recipe that I use as a favorite of my family. I only use 2 eggs, I use 3/4c sugar, 1/2 walnuts instead of almonds, I use whatever kind of apple I happen to have in the house, and instead of 2/3c veg oil I use 1/2 c coconut oil and 1/2 c unsweetened applesauce. These are a definite winner
    I've cooked/tasted this recipe!
