%20but%20which%20I%20believe%20now%20to%20be%20individual%20jello%20molds.%20No%20matter,%20St.%20Honoratus%20gave%20me%20the%20self-confidence%20to%20put%20these%20new%20kitchen%20treasures%20to%20use,%20and%20after%20a%20thorough%20cleaning,%20drying%20and%20anointing%20with%20holy%20oil,%20or%20rather%20cooking%20spray,%20they%20were%20perfect%20for%20shaping%20my%20sticky%20and%20unwieldy%20donut%20batter%20into%20perfect%20little%20cake%20donuts.%3C/p%3E%3Cp%3EI%20started%20with%20this%20great%20recipe%20for%20a%20vegan%20chocolate%20donut%20from%20this%20blogger,%20and%20then%20adapted%20it%20to%20be%20gluten-free%20and%20to%20incorporate%20the%20coconut%20oil%20for%20my%20exploration%20into%20the%20donut%20zone.%20I%20thought%20that%20the%20garbanzo%20bean%20flour%20would%20work%20beautifully%20in%20a%20chocolate%20doughnut,%20both%20in%20terms%20of%20taste%20and%20texture,%20and%20that%20proved%20to%20be%20the%20case.%20The%20dough%20was%20rather%20sticky,%20as%20most%20GF%20batters%20tend%20to%20be%20and%20really%20dripped%20rather%20slowly%20and%20thickly%20from%20my%20wooden%20spoon%20into%20the%20greased%20donut%20molds.%20It%20was%20a%20messy%20project,%20but%20satisfying,%20and%20the%20gooey%20batter%20leveled%20itself%20out%20after%20a%20minute%20or%20so,%20so%20I%20didn't%20have%20to%20smooth%20it%20into%20position.%3C/p%3E%3Cp%3EThese%20doughnuts%20are%20cakey,%20rather%20than%20CRISPY,%20like%20fried%20doughnuts.%20They%20had%20a%20not%20too%20sweet%20taste%20and%20the%20chocolate,%20gooey%20glaze%20was%20the%20perfect%20counterpoint.%20With%20a%20glass%20of%20cold%20milk%20or%20a%20mug%20of%20hot%20coffee%20on%20the%20side,%20(and%20I%20tried%20out%20both%20options),%20this%20made%20the%20perfect%20snack/breakfast/go-to-the-gym-motivator.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F.%20%20If%20you%20own%20doughnut%20molds%20or%20donut%20rings/small%20jello%20molds,%20lightly%20spray%20them%20with%20cooking%20spray.%20If%20you%20don't%20own%20such%20things,%20try%20a%20different%20recipe,%20because%20this%20batter%20is%20too%20oozy%20for%20shaping%20freehand.%3C/p%3E%3Cp%3EBlend%20together%20sugar,%20flours,%20baking%20cocoa,%20baking%20powder,%20baking%20soda,%20xanthan%20gum%20and%20salt.%3C/p%3E%3Cp%3EAdd%20the%20%20milk%20and%20vinegar%20mixture,%20coconut%20oil,%20eggs%20and%20vanilla.%20Mix%20just%20until%20the%20ingredients%20are%20combined.%3C/p%3E%3Cp%3EDribble%202%201/2%20tablespoons%20of%20batter%20into%20each%20prepared%20doughnut%20mold.%20My%20batter%20was%20very%20thick%20and%20I%20had%20a%20lot%20of%20drips%20and%20drizzles%20all%20over%20the%20molds%20until%20I%20got%20the%20hang%20of%20it,%20so%20I%20kept%20a%20wet%20napkin%20at%20the%20ready%20to%20wipe%20things%20down.%3C/p%3E%3Cp%3EBake%20for%2020%20minutes.%20Let%20cool%20on%20the%20racks%20for%2010%20minutes.%20Run%20a%20knife%20around%20the%20doughnuts%20in%20the%20molds%20and%20invert%20them%20onto%20a%20baking%20sheet.%20Let%20cool%20another%2010%20minutes.%3C/p%3E%3Cp%3EMake%20chocolate%20glaze%20by%20melted%20coconut%20oil%20over%20a%20low%20flame%20in%20a%20frying%20pan.%20Add%20chocolate%20chips,%20and,%20stirring%20continuously,%20let%20melt%20into%20a%20smooth%20chocolate%20glaze.While%20glaze%20is%20still%20warm,%20dip%20half%20of%20the%20doughnut%20into%20the%20chocolate%20sauce.%20Allow%20some%20to%20drip%20off%20and%20then%20dip%20glaze%20side%20down%20into%20your%20coconut%20or%20sprinkles.%20Let%20dry%20on%20a%20rack%20for%20at%20least%20another%2010%20minutes.%3C/p%3E%3Cp%3EMakes%2012%20doughnuts.%20GF%20Ratios:%204:1.5:1.5:2.%3C/p%3E%3Cp%3EThese%20doughnuts%20are%20not%20super-sweet%20like%20a%20coffee-store%20donut%20or%20greasy%20like%20the%20cider%20donuts%20you%20get%20at%20an%20apple%20orchard.%20Instead,%20they%20are%20more%20cake-like%20and%20semi-sweet%20like%20a%20great%20cake%20donut,%20but%20they%20were%20a%20stone%20cold%20delight%20for%20my%20family.%20I%20am%20envisioning%20making%20spice%20cake%20and%20carrot%20cake%20versions%20in%20the%20future,%20and%20will%20certainly%20be%20checking%20out%20the%20other%20GF%20Ratio%20Rally%20recipes%20that%20other%20bloggers%20have%20posted%20over%20at%20GF%20Boulangerie.%20St.%20Honoratus%20would%20want%20me%20to.%3C/p%3E){kind=link}
