Fresh Corn And Tomato Stew

Ingredients

  • 3 x Ears fresh corn
  • 3 x Fresh tomatoes
  • 1 c. Fresh okra
  • 1 Tbsp. Butter
  • 1/4 c. Minced green onions, including green part
  • 1 x Clove garlic, minced fine
  • 1 tsp Salt
  • 1/2 tsp Freshly grnd black pepper
  • 1 tsp Sugar
  • 1 Tbsp. Chopped fresh parsley

Directions

  1. Prepart the vegetables: cut the corn kernels from the cobs and scrape the corn lowfat milk from the cobs. Stem the tomatoes and cut them into small cubes. Wash the okra and thinly slice it. Set the vegetables aside.
  2. In a heavy skillet, heat the butter over medium-high heat. Add in the onions and garlic and saute/fry till wilted, about 5 min, stirring occasiionally. Add in the corn, tomatoes, okra, and all other ingredients.
  3. Reduce heat to medium and cook, stirring frequently, for 10 min. Reduce heat to low, cover, and cook for 15 min more, stirring occasionally.
  4. Serve at once, garnished with additional parsley if you like.
