Burrito filling...without the wrap!

Hand me a bowl of Mexican style flavored beef, rice and everything nice, along with a fork, and I’m good!

You've probably noticed the absence of shredded cheese. It is good with it on top but when I made this I was feeling SUPER lazy.

I had a busy night, the evening before, at a local college doing a cooking event and the thought of having to clean the cheese grater (it’s the one cooking utensil I hate having to wash) kept me from shredding.

However...after I took the picture I served this to my kids. They wanted cheese on top and I ended up having to clean that knuckle scraper anyway.

I didn't mind chopping the green onion and tomato because I knew I would only have to clean a knife and wipe a cutting board once I was done. It was also necessary because this picture would have looked pretty lame without the colorful toppings!

I called this Fiesta Rice but to be straight-up with you there was no party happening on when I ate this.

I would describe it as more of a siesta atmosphere with me in a happy, slightly comatose state of mind, enjoying my bowl of comforting Mexican style rice!

If you're going to add cheese, buy the pre-shredded stuff ; )

Time it takes: 20 minutes to prepare

Chopped fresh tomatoes and green onions for topping.

Cook rice according to package directions.

While the rice is cooking, in a large skillet, cook beef and onion over medium-high heat until beef is cooked through. Reduce heat to low and stir in taco seasoning. Mix well.

Add water, salsa, black pepper and black beans. Stir. Add in cooked rice and stir once more.

Top with chopped tomatoes, green onions and your favorite toppings.
