- Basic Sweet Dough
- 1/2 teaspoon each cinnamon and nutmeg
- About 1/4 c. butter, softened
- 1/4 c. honey, heated

Ensaimadas - Spanish Sweet Buns

Directions
- Prepare dough, adding cinnamon and nutmeg to dry ingredients. Punch down risen dough. Knead lightly till smooth. Cover; let rest 5 - 10 min. On floured surface roll dough to thin rectangle; spread lightly with butter; mix in half; roll and spread with butter again.Mix in half; roll to 15 x 12 inch rectangle. Cut in 12 (15 inch long) strips. Roll each in a 20 inch rope. On flat surface wind each into a coil shaped bun; tuck ends firmly underneath. Place about 2 inches apart on greased baking sheets. Cover; let rise 30 min or possibly till doubled.
- Bake in preheated 375 degree oven 15 min or possibly till done. Remove to racks; immediately brush with honey. Makes 12.
