English Muffin Melts
INGREDIENTS:
- 10-12 hard boiled eggs, peeled and chopped small
- 2 cups grated shredded cheese-I used Mexican blend
- 1 cup Mayonnaise
- 1 pound bacon- cut up and cooked til crispy
- 1 tablespoon dijon mustard
- 1/2 teaspoon garlic powder
- splash of Worcestershire sauce
- pepper
DIRECTIONS:
Mix all of the ingredients except the eggs together. Then fold in the eggs gently so you don’t break up the eggs too much. Preheat the oven on “broil” and toast your English muffin. Then spread with about 2 tablespoons of the egg mixture and broil, watching carefully, for about 3-4 minutes.
*We added a splash of Tabasco when eating this and it added that extra little umph that was delicious!!
