Easy Spanish Rice Recipe

Ingredients
- 8 tbsp. minute rice
- 1 sm. onion
- 1 can tomatoes
- 1/2 c. cubed sharp cheese
- 1/2 green pepper, minced
- 1 tbsp. butter
- 1 c. boiling water
Directions
- Place all ingredients in a small (1 1/2 to 2 qt) casserole and mix well. Bake for 1 hour in a 350 degree oven. Serves 4-6.
