Easy Southwestern Spicy Chicken Stew

Delicious, hearty, and spicy easy to make chicken stew.

Ingredients

  • 1 bone in chicken breast
  • 4 cups water
  • 2 cans diced tomatoes
  • 1 can of El Pato Salsa Con Fresco
  • 2 cups chicken bouillon
  • 1 can black beans
  • 1 can pinto beans
  • 3 cups corn
  • diced celery
  • diced Mexican green onion
  • diced jalapeno from a jar
  • Chili de pequin (2-3 dried crushed)
  • Chili de tepin (2-3 dried crushed)
  • 1 TB Mexican Oregano
  • 1 Tsp Cumin
  • 1 Tsp Salt

Directions

  1. Boil chicken breast in water until falling apart.
  2. Remove the chicken from the bone and return to the water.
  3. Add all the remaining ingredients.
  4. Simmer for about an hour.
  5. Serve.
