Easy Chicken Bake with Stuffing Recipe

I love dressing/stuffing year-around. Here is an easy prep busy weeknight supper.

Ingredients

  • 4 skinless, boneless chicken breasts
  • 1 can your favorite cream of whatever soup
  • 1/4 cup milk or half and half
  • salt and pepper to taste
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dry parsley
  • 1 cup your favorite shredded cheese
  • 1 cup dry Pepperidge Farms stuffing mix (I like cornbread)
  • 3-4 tbs. melted butter or margerine
  • 2 tbs. hot water
  • paprika
  • chopped parsley

Directions

  1. Heat oven to 350 F.
  2. Add soup to a mixing bowl, stir in milk or half and half. *
  3. Dip chicken in soup, place in a baking pan or dish.
  4. Pour on the rest of the soup.
  5. Top with cheese.
  6. Add the butter and water to dry stuffing, mix, sprinkle on top of chicken.
  7. Bake 50-60 minutes.
  8. Remove chicken from oven, cover 10 minutes.
  9. Sprinkle on paprika or parsley.
  10. * I just mix this all up in a Dutch oven.

    I LIKE THIS RECIPE! FOR ME THO - I WOULD USE BAKERY STUFFING CUBES BECAUSE OF DRIED ONION .IS THERE ANY LOW SODIUM SOUP OUT THERE? INSTEAD OF HALF/HALF MILK WOULD CUT CALORIES.

      Hi Pam,

      Campbell's makes low-sodium soups.

      Part of what makes the recipe work is that the dry stuffing (which contains no dried onion flakes) is that it absorbs liquids, and I would think cubes might be too thick.
