Cucumber Vinegar Salad

This was a favorite summertime salad of my mine. I remember my mother making this on a regular basis with garden fresh cucumbers and onions. I put a little tweak on it and added a tomato. Delicious.

Ingredients

  • 1 cucumber peeled and sliced (approximately 1-1/2 cups)
  • 1 small onion sliced and rings pulled apart
  • 1/2 cup tomato, chopped
  • 3/4 cup water
  • 3/4 cup white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Place the cucumber slices, tomato chunks and the onion slices in a bowl. Sprinkle the salt and the black pepper over the vegetables and toss to coat evenly. Pour in the water and the vinegar and mix to combine. Store in an air tight container overnight in the fridge.
  2. To serve spoon desired amount of cucumber mixture out with a slotted spoon so that you drain the liquid off. Store any leftovers back in the airtight container in the liquid and in the fridge for several days. Serves 4.
