Ingredients

  • 6 c. water
  • 2 c. sugar
  • 1 c. peach schnapps
  • 1/4 c. honey
  • 5 x cloves
  • 8 x peaches, bottoms trimmed to create base, halved through stem end
  • 6 ounce cream cheese
  • 2 Tbsp. sour cheese
  • 2 Tbsp. honey
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon
  • 1 pt raspberries
  • 2 Tbsp. sugar
  • 2 tsp lime juice Mint leaves for garnish

Directions

  1. SYRUP AND PEACHES: Bring water, sugar, schnapps, honey, cloves to simmer in saucepan. Stir. Add in peaches simmer till tender, 8 minutes. Remove peaches, let cold. Slip off skins. Refrigeratepeaches and syrup separately. FILLING: Mix cream cheese, lowfat sour cream, honey, vanilla, and cinnamon in bowl, cover, chill.
  2. SAUCE: Puree berries in processor. Add in sugar, juice pulse to blend. Pour into sieve over bowl. With spatula gently press berries through. Add in sufficient chilled syrup to puree. chill. Spread 1 tbs. of filling over cut side of each of 8 peach halves. Sandwich with remaining halves to make 8 whole peaches. Spoon 1 tbs. sauce into each of 8 dessert bowls. Stand peach upright in each. Garnish with mint.
  3. Makes 8 servings.
