Tuscan shrimp marinara with chickpea pasta

Tuscan shrimp marinara with chickpea pasta by John Spottiswood

This is a great Tuscan recipe adapted from the Flavors of Tuscan cookbook by Maxine Clark. Maxine recommends making fresh chickpea pasta. We use Barilla Plus pasta, which is made with chickpeas just like Maxine recommends. By skipping making your own pasta, this becomes a very easy and healthy dish.

Spaghetti with Seafood in Tomato and Herb sauce

Spaghetti with Seafood in Tomato and Herb sauce by John Spottiswood

A colleague of mine brought in some fresh oregano, marjoram, and Italian parsley from his garden, so I looked for a fresh herb pasta recipe. I changed the herbs up a bit to use what I had, substituted prawns for mussels, and ended up with a delicious pasta. As long as you get the basics of this sauce right, you can mess around with…

Bill's Penne alla Vodka

Bill's Penne alla Vodka by Angie Morris

“This recipe is tailor-made for my husband Bill, done the way he likes Vodka sauce - lots of bacon, lots of Vodka, and very creamy. He is the Vodka sauce expert and he has a favorite restaurant where he always orders it. But he says my recipe is just like it! I take that as a huge compliment! You can just barely taste the Vodka in…

Shrimp Scampi Pasta

Shrimp Scampi Pasta by Sean

This recipe originally did not have any pasta, but I modified the sauce to be more robust to accommodate that addition. This dish is light and tart, but has strong flavor.
