Ingredients
- 1/4 cup + 1 T (1 oz/28 g) unsweetened Dutch-process cocoa (I used Valrhona)
- 1/4 cup boiling water
- 2 t vanilla
- 1 3/4 cups (12.25 oz/350 g) sugar
- 1 cup (3.5 oz/100 g) sifted cake flour
- 1/4 t salt

,%20and%20this%20Chocolate%20Angel%20Food%20Cake,%20both%20served%20with%20the%20option%20of%20whipped%20cream.%20Our%20meal%20was%20not%20super%20heavy,%20but%20it%20was%20rich%E2%80%93roasted%20beef%20tenderloin%20with%20a%20wild%20mushroom%20ragout%20was%20the%20main%20course.%20I%20thought%20after%20the%20beef%20and%20a%20month%20of%20eating%20super%20rich%20candies%20and%20cookies,%20a%20lighter%20yet%20special%20dessert%20would%20be%20appreciated.%20I%20had%20never%20tackled%20a%20cake%20that%20was%20baked%20in%20a%20non-nonstick%20tube%20pan%20before,%20i.e.,%20chiffon%20cakes%20and%20angel%20food%20cakes.%20So%20for%20me%20it%20was%20outside%20the%20box%20and%20therefore%20worthy%20of%20Christmas%20dinner%20(I%20don%E2%80%99t%20like%20making%20desserts%20I%E2%80%99ve%20made%20before%20for%20special%20occasions%E2%80%93just%20a%20small%20hang-up%20of%20mine).%3C/p%3E%3Cp%3EI%20thought%20I%20had%20settled%20on%20a%20chocolate%20angel%20food%20cake%20recipe,%20but%20then%20I%20was%20at%20a%20party%20where%20the%20hostess%20had%20baked%20Rose%20Levy%20Beranbaum%E2%80%99s%20chocolate%20angel%20food%20cake.%20I%20was%20completely%20and%20totally%20hooked.%20It%20was%20perfect.%20It%20is%20moist%20and%20really%20chocolatey%E2%80%93and%20yet,%20like%20I%20said,%20light,%20ethereal.%20For%20once,%20no%20one%20said%20%E2%80%9COh%20this%20is%20so%20rich%20I%20cannot%20finish%20it%E2%80%9D%E2%80%93instead%20their%20plates%20had%20nary%20a%20crumb.%3C/p%3E%3Cp%3EI%20took%20the%20pictures%20the%20next%20day,%20which%20is%20why%20there%20are%20no%20pictures%20of%20an%20intact%20cake.%20Also,%20one%20note%20on%20the%20ingredients:%20as%20many%20of%20you%20know,%20Beranbaum%20is%20incredibly%20precise%20with%20measurements%E2%80%93so%20on%20a%20whim%20I%20measured%20my%20egg%20whites%20(I%20have%20never%20bothered%20measuring%20eggs).%20Lo%20and%20behold,%2014%20eggs%20whites%20were%20exactly%20enough%20in%20volume%20and%20in%20ounces%20and%20only%202%20grams%20too%20much%20in%20metric%E2%80%93and%20I%20thought%20my%20eggs%20were%20on%20the%20small%20side.%20The%20moral%20is%20that%20if%20you%20have%20a%20scale%20or%20even%20just%20a%20measuring%20cup,%20I%20do%20recommend%20measuring%20your%20eggs%20whites!%3C/p%3E%3Cp%3EChocolate%20Angel%20Food%20Cake%3C/p%3E%3Cp%3EThe%20Cake%20Bible,%20Rose%20Levy%20Beranbaum%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F.%3C/p%3E%3Cp%3EIn%20a%20medium%20sized%20bowl,%20pour%20the%20boiling%20water%20over%20the%20cocoa%20powder%20and%20whisk%20it%20smooth.%20Whisk%20in%20the%20vanilla.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20another%20medium%20bowl,%20whisk%20together%203/4%20cup%20of%20sugar,%20the%20flour%20and%20the%20salt.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20beat%20the%20egg%20whites%20until%20they%20are%20frothy%E2%80%93make%20sure%20your%20bowl%20and%20beater/whisk%20are%20completely%20clean.%20Add%20the%20cream%20of%20tartar%20and%20then%20continue%20beating%20until%20the%20egg%20whites%20hold%20soft%20peaks.%20Gradually%20beat%20in%20the%20remaining%201%20cup%20of%20sugar%E2%80%93I%20ran%20my%20mixer%20on%20a%20medium%20speed%20while%20slowing%20pouring%20in%20the%20sugar%E2%80%93beat%20until%20the%20egg%20whites%20hold%20very%20stiff%20peaks%20when%20the%20whisk%20is%20lifted%20slowly%20out%20of%20the%20bowl.%20Remove%20one%20heaping%20cup%20of%20egg%20whites%20and%20dump%20it%20on%20top%20of%20the%20cocoa%20mixture%E2%80%93set%20aside.%3C/p%3E%3Cp%3ESift%20the%20flour%20mixture%20over%20the%20egg%20whites,%201/4%20cup%20at%20a%20time,%20and%20fold%20the%20flour%20into%20the%20egg%20whites%20gently.%20Beranbaum%20suggested%20several%20implements%20for%20this%20task,%20including%20a%20slotted%20spoon%20and%20balloon%20whisk,%20but%20honestly,%20despite%20her%20advice,%20I%20still%20preferred%20my%20silicone%20spatula.%20She%20does%20note%20it%20is%20not%20necessary%20to%20incorporate%20every%20single%20last%20speck%20of%20flour%E2%80%93which%20I%20forgot%20and%20did.%3C/p%3E%3Cp%3EWhisk%20together%20the%20cocoa/egg%20white%20mix%20until%20incorporated%20and%20then%20dump%20this%20mixture%20into%20the%20egg%20white/flour%20mix.%20Fold%20together,%20gently,%20until%20the%20mixture%20is%20uniform.%20Pour%20this%20into%20a%2010%20inch%20tube%20pan%20with%20removable%20bottom%20and%20run%20a%20small%20spatula%20or%20knife%20quickly%20through%20the%20batter%20to%20eliminate%20air%20bubbles%20(not%20foolproof,%20I%20still%20got%20some,%20but%20it%20will%20help).%20Bake%20for%2040%20minutes,%20or%20until%20the%20cake%20springs%20back%20when%20pressed%20and%20a%20cake%20tester%20comes%20out%20mostly%20clean.%3C/p%3E%3Cp%3EWhile%20the%20cake%20is%20baking,%20get%20a%20wine%20bottle%20(or%20something%20similar)%20and%20place%20it%20on%20your%20counter%20in%20a%20draft%20free%20spot.%20When%20the%20cake%20is%20done,%20invert%20it%20over%20the%20wine%20bottle,%20letting%20the%20center%20rest%20on%20the%20wine%20bottle,%20so%20that%20the%20cake%20can%20cool%20well%20away%20from%20the%20counter.%20Cool%20the%20cake%20completely.%3C/p%3E%3Cp%3ELoosen%20the%20sides%20with%20a%20thin%20knife%20and%20remove%20the%20sides.%20Use%20the%20knife%20to%20also%20loosen%20the%20cake%20from%20the%20bottom.%20Invert%20the%20cake%20off%20of%20the%20pan%20and%20then%20re-invert%20it%20back%20to%20that%20it%20is%20resting%20top%20side%20up%20on%20a%20cake%20plate%20(I%20found%20this%20tricky,%20but%20ultimately%20it%20worked%20out%20fine).%20If%20not%20serving%20immediately,%20wrap%20it%20in%20plastic%20wrap%20and%20then%20store%20in%20a%20cake%20keeper.%3C/p%3E){kind=link}
