Ingredients

  • 1 pound boneless skinless chicken breasts-cubed
  • salt and pepper-to taste
  • 1/2 pound baby bella mushrooms-sliced
  • 1/2 onion-diced
  • 1 can low sodium cream of mushroom soup
  • 1 cup lite sour cream
  • 1 teaspoon nutmeg
  • 1 tube Pillsbury Flaky Biscuits

Oh my, now this is a meal I can stick my teeth into! I put the chicken and gravy over biscuits, but you could also pour it over noodles or rice. This actually looks really rich, but I used all low-fat ingredients, so take away the biscuits and you have a healthy meal here!

Chicken & Biscuits

INGREDIENTS:

  • 3 tablespoons butter
  • 1 pound boneless skinless chicken breasts-cubed
  • salt and pepper-to taste
  • 1/2 pound baby bella mushrooms-sliced
  • 1/2 onion-diced
  • 1 can low sodium cream of mushroom soup
  • 1 cup lite sour cream
  • 1 teaspoon nutmeg
  • 1 tube Pillsbury Flaky Biscuits

DIRECTIONS:

In a large skillet, melt the butter over medium-high heat. Season the chicken with salt and pepper. Add chicken to the skillet, and cook for 5 to 6 minutes. Add mushrooms and onions, and cook for 3 to 4 minutes. Stir in soup, and cook for 2 minutes. Stir in sour cream, cook for 3 minutes more. Sprinkle in nutmeg and stir. Serve over warm biscuits.
