Chevy's Sweet Corn Pudding

When My kids were younger, the one restaurant Hubby and I would go to regularly was Chevy's. It was loud inside so the fact that we were "those kinda people", yes the ones that had the kids running around the table, "talking" animatedly, and just plan causing a ruckus, didn't seem to stand out quite as badly. You know the type of joint. We loved it. The food was actually really good and decently priced to boot. What more can a young family ask for?

One item they served with most entrees, as an accompaniment, was this absolutely delicious Sweet Corn Pudding. My whole family was crazy for it. I mean, seriously, CRAZY! They always asked for extra! I was so happy when I found the Chevy's cookbook and this fab little recipe was in it. It was everything I remembered and my whole fam absolutely devoured the entire 9x13inch pan!

Be sure to use an instant read thermometer to check for doneness. The pudding top doesn't brown so it looks kinda uncooked visually. Btw-don't skip the water bath it keeps the pudding deliciously moist.

Chevy's Sweet Corn Pudding

Ingredients:

  • 6 cups corn (divided)
  • 3/4 cup milk
  • 1/4 cup butter
  • 1/2 cup masa
  • 2/3 cup sugar
  • 3/4 cup cornmeal
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/4 cup milk

Instructions:

1. Preheat oven to 250 degrees.

2. In a food processor blend 3 cups of the corn with 3/4 cups milk until smooth. Add mixture to a large mixing bowl.

3. In a food processor blend butter, masa, and sugar for 2 minutes. Add to the bowl with the processed corn.

4. Add all the rest of the ingredients to the processed corn. Stir to mix well.

5. Spray a 9x13 baking dish with Pam. Pour batter into dish. Cover tightly with aluminum foil. Set the dish into a large roasting pan. Pour enough cool water into the roasting pan to reach 3/4 inch up the outside of the 9x13 pan.

6. Bake in preheated oven for 1 1/2 to 2 hours, or until the corn mixture registers 175 degrees on an instant read thermometer.

7. Serve hot!
