Ingredients

  • 1 1/2 c. flour
  • 1 1/2 teaspoon baking pwdr
  • 1/4 teaspoon salt
  • 2 tbsp. shortening
  • 1 c. sugar
  • 1 egg
  • 3/4 c. lowfat milk
  • 1 (No. 2) can tart red pitted cherries & the liquid
  • 1/2 c. water
  • 1/4 c. sugar

Directions

  1. Sift flour, baking pwdr and salt. Cream shortening and add in sugar and egg. Add in dry ingredients and lowfat milk (alternately to the creamed mix). Heat cherries and the juice, water and 1/4 c. sugar in a saucepan. Empty half of the cherry mix into a greased 8"x8" baking dish, pour pudding batter into the pan over the cherries. Dip the remaining cherries and juice over pudding and bake, uncovered at 350 degrees for 40 to 45 min.
