Ingredients

  • 4 c. Minced peaches
  • 1/4 c. Minced maraschino cherries
  • 2 Tbsp. Lemon juice
  • 1 box pectin
  • 5 1/2 c. Sugar

Directions

  1. Combine the peaches, cherries, lemon juice and pectin in a large pan. Bring to a boil. Add in sugar and a dollop of butter to take care of the foam. Stir constantly and bring to a boil again (a hard boil which can't be stirred down). Stir and boil for one (1) minute. Remove from fire and stir for several min. Fill warm jelly jars (7-8 c. jelly) and top with warm lids and rings. Put in a warm water bath for 10 min. This is not only delicious, but looks very pretty. I think you could also make this at the holiday time by buying frzn peaches if you do not have some in your freezer.
