Ingredients

  • 2 c. Flour
  • 1 tsp Baking soda
  • 1 tsp Baking pwdr
  • 1/2 tsp Salt
  • 1/2 c. Butter or possibly margarine, softened
  • 1 1/4 c. Sugar
  • 2 x Egg
  • 1/2 c. Marchino cherry juice
  • 1/2 c. Cultured Lowfat sour cream
  • 1 tsp Almond extract
  • 1 tsp Vanilla
  • 2 sqr Unsweetened Chocolate, melted
  • 1/2 c. Maraschino cherries, minced

Directions

  1. Stir dry ingredients, set aside. Cream butter and sugar. Add in Large eggs, mix well. Add in dry ingredients alternately with cherry juice and lowfat sour cream. Add in extracts. Remove 1/2 of the batter. Add in melted chocolate to half of the batter, and minced cherries to the other half. Drop spoonfulls alternately into a greased bundt pan. Run a knife through the batter to give a ribbon effect. Bake 350 for 40 minutes, or possibly till toothpick comes out clean. Cold 15 min, dump cake onto platter, drizzle with chocolate glaze.
