  • 1 c. Dry sour cherries
  • 1 c. Water Two, (8-oz) pkgs. cream cheese, softened
  • 1/2 c. Minced toasted pecans
  • 1 Tbsp. Fresh lime juices
  • 1/2 tsp Fresh thyme leaves
  • 1/4 tsp Freshly grated lime zest Scones or possibly crackers as accompaniments

Directions

  1. In a small heavy saucepan simmer cherries in water till liquid is reduced to about 1 Tbsp.. Remove pan from heat and cold mix.
  2. In a bowl whisk together cream cheese, pecans, lime juice, thyme, zest, cherry mix, and salt and pepper to taste till spread is combined well. Spread may be made 2 days ahead and kept chilled, covered.
  3. Serve spread with scones or possibly crackers.
  4. Makes about 3 c..
