I still have 3 spaghetti squash and 5 butternut squash in my cellar.

We took a break over Christmas and had the more traditional Brussels Sprouts with Chestnuts.

We both love all the winter squashes, but it was a treat to have something green.

These timbales were also a treat.

I’ve made other variations in the past. This time I wanted it to be simple, but I like the idea of pairing winter squashes with apples.

Still, I was thinking first course, not dessert, so I didn’t use any apple-pie spices.

Since it was Christmas I added a spoonful of the Ginger Cranberry Sauce.

I used a Pink Lady apple and left the peel on to help retain shape.

Butternut Squash Timbales with Warm Apples Slices

Instructions:

Butter 2 ramekins and line bottom with buttered parchment or waxed paper

Make 2 more circles and butter one side for the top.

Whisk egg, mustard, herbs, salt and paprika.

Add butternut squash, cheese and mix well.

Spoon into prepared ramekins. Cover with the top circle. Put into a roasting pan with deep sides – I use a metal bread pan, and add hot water (hot tap water is fine) so that it comes half way up the sides of the ramekins. Bake in 400F (200C) oven for 30 minutes, until set – top will be firm.

While timbales bake – 5 minutes before they’re ready:

Sauté apples slices in butter until soft, turning once, app. 7 minutes. Be careful not to get them so soft that they lose their shape.

Keep warm until needed.

Remove from oven and carefully remove ramekins from hot water.

Remove paper. Run a knife around edges of timbales and invert onto small plates. Remove paper.

Spoon Apples around the timbales and serve.

Mon mari has been lazing around the house, sitting in front of the fire, and watching some of the stupid entertaining end-of-year programs on TV.

He has several excuses….

It’s the Christmas holidays and no one else is working. (Yeah, right!)

It’s cold. (It got down to -6 C / 21 F last night and only up to 4 C / 39 F today. That may be cold by French standards but we’re from the Midwest – that’s balmy in the Midwest. Besides, he’s working inside.)

He needs ceiling boards and doesn’t want to take the trailer to Bordeaux to buy them until after the holidays. (This one actually works. With all the kids on holiday break it would be a zoo.)

As for me….. I think I’ll go join him by the fire.

In the meantime – enjoy some more winter squashes.
