Flapjacks are one of my favourite things ever but I can't really eat them at the moment because of my braces *metal grimace* I can just about manage the chewy butter ones, but they get stuck in the most awkward places and so they are not the most sociable things I can eat right now.
Cue a butter free soft option that crumbles nicely in your mouth all on its own.
But don't worry, they are not crumbly in a horrible, dry way. These have a generous dollop of blueberry jam in the mix, and, along with some nice juicy berries, creates a lovely, soft flapjack, minus the fatty butter. Great stuff.
Butter Free Blueberry Jam Flapjacks
Makes 14:
- 200g fresh or frozen blueberries
- 4 tbsp blueberry jam
- 175g self raising flour
- 175g rolled oats
- 150g ground almonds
- 125g sugar
- 1 tbsp baking powder
- 150ml grapeseed oil
- 1 egg
1) Sieve the flour into a large bowl, and mix in the oats, almonds, sugar and baking powder.
2) Fold in the blueberries.
3) In a separate bowl, beat the egg with the jam and oil until smooth. Add to the dry mixture and mix well.
4) Pour into a lined 12 x 8" tin, using a knife to smooth out the top.
5) Bake at 180 degrees C for 25-30 minutes until nicely brown.
