Ingredients

  • 1 c. Buckwheat flour
  • 1 1/4 c. Sifted whole wheat flour
  • 2 tsp Baking pwdr
  • 1 tsp Baking soda
  • 2 tsp Sugar
  • 1 tsp Salt
  • 2 tsp Freshly grated ginger
  • 1 x Scallion, minced
  • 3 x Egg yolks
  • 1/4 c. Melted butter
  • 1 Tbsp. Sesame oil
  • 4 c. Buttermilk
  • 1/2 c. Lowfat milk
  • 3 x Egg whites
  • 1 c. Blood orange juice
  • 1 c. Honey

Directions

  1. Mix dry ingredients together. In separate bowl mix the wet ingredients (not including egg whites). Add in dry ingredients into the wet mix. Whip the egg whites to soft peaks and fold into batter.
  2. Allow batter to rest 30 min before making your pancakes.
  3. Yield: 50 3-inch pancakes.
  4. BLOOD ORANGE AND HONEY SYRUP:Hot gently upon service. Don't boil.
