Ingredients

• 24oz (720gr) pork, cut into large cubes
• 2oz (60gr) dry-cured ham, such as Prosciutto, Serrano
• 6 shallots, sliced
• 2 tsp olive oil
• 1 tsp paprika
• 1/2 tsp cumin
• 1/2 tsp celery powder
• 1 tsp dry mustard
• 2 tsp oregano
• 2 cups (15oz, 450gr) chopped tomatoes
• 1 1/2 cups (12oz, 360ml) red wine
• 1 tbs cornstarch dissolved in 2 tbs water
