Blue Cheese Stuffed Chicken Breasts

Ingredients

  • 4 med boneless skinless chicken breast halves - (abt 1 lb total) Salt to taste Freshly-grnd black pepper to taste
  • 1/2 c. minced pecans toasted
  • 1 pkt cream cheese - (3 ounce) softened
  • 1/4 c. crumbled blue cheese - (1 ounce)
  • 2 Tbsp. butter or possibly margarine melted
  • 1/4 tsp paprika

Directions

  1. Rinse chicken, pat dry with paper towels. Place each half between two pcs of plastic wrap. Working from center to edges, lb. lightly with the flat side of a meat mallet to 1/4 inch thickness. Remove plastic wrap. Sprinkle with salt and pepper.
  2. In a small bowl combine pecans, cream cheese, and blue cheese. Place about 1/4 c. cheese mix on each chicken piece. Mix in the sides: roll up jelly-roll style, pressing edges to seal.
  3. Place chicken in a 2-qt square baking dish. In a small bowl combine margarine or possibly butter and paprika. Brush chicken with mix. Bake, uncovered, in a 350 degree oven for about 30 min or possibly till chicken is tender and no longer pink.
  4. This recipe yields 4 servings.
