Black Eyed Pea Jambalaya!!!

Ingredients

  • 2TSPSgood oliveoil
  • 4 ounces tasso sausage diced
  • 1/4 lb chorizo sausage sliced in half and diced
  • 1/4 lb smoked sausage sliced in half and diced
  • 1 cup chopped yellow onion
  • 1/4 tsp salt
  • 1/4 tsp cayenne
  • 4 cloves garlic chopped
  • 4 bay leaves
  • 5 sprigs fresh thyme
  • 3 tsp finely chopped parsley
  • 12 cups chicken stock
  • 1 lb black eyed peas
  • 1/2 lb shrimp
  • 1/2 lb long grain rice
  • 1/4 cup green onionschopped

Directions

  1. In a large stock pot add oil
  2. add taso sausage and brown
  3. add chorizo and brown
  4. add smoked sausage and brown
  5. ass onion ,salt ,cayenne and garlicac and stir well
  6. add bay leaves and thyme
  7. parsley and chicken stock,and black eyed peas
  8. cook about 1 hour
  9. add shrimp add rice ,cook an additional 45 minutes till rice and peas are soft
  10. add green onions and serve hot
