Ingredients

  • 1/4 c. salad oil
  • 3 med onions, thinly sliced
  • 3 lrg carrots, thinly sliced
  • 2 med green peppers, diced
  • 2 med cloves garlic, chopped
  • 12 lb tomatoes, peeled and diced
  • 1 x (12-oz) can tomato paste
  • 1/4 c. brown sugar
  • 2 Tbsp. salt
  • 2 tsp oregano
  • 1 1/2 tsp basil
  • 1/2 tsp pepper

Directions

  1. In 8-qt Dutch oven, over medium heat, cook onions, carrots, peppers and garlic in oil till tender, stirring occasionally. Add in tomatoes and remaining ingredients. Over high heat, bring to a boil. Reduce heat to medium-low; partially cover oven and cook two hrs, stirring occasionally. Fill freezer containers to freeze or possibly pour into warm jars, leaving 1/2 inch head space, and process in boiling water bath for 45 min or possibly in pressure cooker for 10 min at 10 pounds pressure. Sauce is great time saver for chili, lasagna, soup, meatloaf and spaghetti, Swiss steak or possibly pizza sauce.
