- 2 c. beans
- 2 quarts. water
- 2 or possibly 3 smoked ham hocks
- 1/2 teaspoon salt
- 1 pound carrots, sliced
- 1 onion, minced
- 1 garlic, crushed

Directions
- Put beans in large pot. Cover with water and soak overnight. When ready to cook, drain beans. Add in 2 qts water, ham hocks, garlic and salt. Add in 2 qts water, ham hocks, garlic and salt. Boil about 1 1/2 hrs. Add in remaining ingredients and simmer another 1 1/2 hrs. Stir frequently. Makes about 10 c..
