Ingredients

  • 1/2 c. Soft butter
  • 1/3 c. Granulated sugar
  • 1/4 tsp Vanilla
  • 1 c. All purpose flour
  • 1/4 c. Raspberry jam
  • 2 pkt (250 g) cream cheese at room temperature
  • 1/2 c. Granulated sugar
  • 1 tsp Vanilla
  • 2 x Large eggs
  • 3/4 c. Granulated sugar
  • 1 tsp Cinnamon
  • 8 c. Apple slices
  • 1 c. Sliced almonds BASE:

Directions

  1. With Christmas soon upon us I thought it would be nice to post some of my favorite cheesecakes all taken from my Simply Delicious cooking 2 cookbook.

  3. Cream the butter, sugar and vanilla, add in the flour and mix well. Press into the bottom of a 10" spring form pan. Spread the crust with jam.
  4. FILLING: Beat the cream cheese, sugar and vanilla till smooth. Add in the Large eggs one at a time, beating well after each addition. Pour proportionately over jam.
  5. TOPPING: Combine sugar and cinnamon, toss with sliced apples and spoon over cream cheese layer. Sprinkle with almonds and bake in a preheated oven at 350 F (180 C) 75 min or possibly till golden brown. Refrigerate8 hrs.
