%20so%20I%20wasn%E2%80%99t%20sure%20how%20it%20would%20bake.%20But,%20I%20was%20happy%20to%20find%20out%20they%20bake%20just%20fine%20&%20actually%20have%20a%20nice%20%E2%80%9Cnut%20crunch%E2%80%9D%20along%20with%20the%20juicy%20fruit.%20I%20tried%20a%20batch%20of%20these%20with%20whole%20wheat%20flour%20&%20they%20weren%E2%80%99t%20very%20good%20%E2%80%93%20too%20dense.%20So%20I%20changed%20the%20recipe%20to%20regular%20unbleached%20flour%20and%20they%20were%20much%20better.%20These%20are%20still%20very%20moist%20and%20rich%20but%20not%20too%20dense.%3C/p%3E%3Cp%3EI%20know%20a%20lot%20of%20people%20don%E2%80%99t%20know%20what%20the%20heck%20to%20do%20with%20pomegranates.%20Like%20I%20said,%20I%20like%20them%20raw%20and%20they%E2%80%99re%20great%20over%20salad,%20yogurt,%20and%20ice%20cream.%20Some%20believe%20that%20this%20is%20the%20original%20%E2%80%9Cforbidden%20fruit%E2%80%9D%20from%20the%20Garden%20of%20Eden.%20%20Pomegranates%20have%20a%20thin%20rind%20that%20opens%20to%20a%20membrane%20filled%20with%20juicy%20fruit%20pods,%20called%20%E2%80%9Carils.%E2%80%9D%20Inside%20the%20aril%20is%20an%20edible%20seed%20that%20is%20high%20in%20fiber.%20The%20fruit%20itself%20is%20full%20of%20antioxidants%20&%20a%20fair%20amount%20of%20potassium.%20If%20you%E2%80%99re%20just%20getting%20acquainted%20to%20this%20winter%20fruit,%20I%E2%80%99ve%20included%20directions%20on%20how%20to%20eat%20one%20below.%20They%20are%20super%20juicy%20&%20the%20juice%20stains%20%E2%80%93%20so%20be%20careful%20&%20use%20the%20water%20bowl%20method%20below%20to%20make%20it%20mess%20free%3C/p%3E%3Cp%3EStart%20by%20making%20an%20%E2%80%9CX%E2%80%9D%20in%20the%20bottom%20of%20the%20pomegranate,%20you%E2%80%99ll%20probably%20want%20to%20follow%20it%20at%20least%201/2%20way%20down%20the%20fruit.%20Be%20careful%20to%20just%20score%20the%20fruit%20%E2%80%93%20the%20rind%20is%20very%20thin%20so%20if%20you%20cut%20right%20through%20you%E2%80%99ll%20pierce%20the%20fruit%20&%20have%20juice%20everywhere.%3C/p%3E%3Cp%3ENext,%20fill%20a%20bowl%20with%20water%20&%20place%20the%20pomegranate%20in%20the%20bowl.%20Gently%20pull%20apart%20the%20pomegranate,%20opening%20to%20see%20the%20fruit%20inside.%3C/p%3E%3Cp%3EWorking%20with%20small%20pieces,%20gently%20thumb%20off%20the%20fruit.%20Discard%20the%20membrane/rind.%3C/p%3E%3Cp%3EWhen%20finished,%20pour%20the%20bowl%20over%20a%20strainer%20and%20enjoy.%20The%20fruit%20can%20be%20stored%20in%20the%20refrigerator%20for%20a%20few%20days.%3C/p%3E%3Cp%3EMUFFINS%3C/p%3E%3Cp%3EBegin%20by%20preheating%20oven%20to%20350.%20Adjust%20rack%20to%20middle%20position.%20Grease%20a%20standard%2012-cup%20muffin%20tin%20and%20set%20aside.%20I%20like%20PAM%20for%20Baking%20(the%20blue%20container%20w/Flour)%20for%20greasing%20my%20baked%20goods.%3C/p%3E%3Cp%3EWhisk%20the%20flour,%20baking%20powder,%20&%20salt%20in%20medium%20bowl%20until%20combined.%3C/p%3E%3Cp%3EWhisk%20the%20egg%20in%20another%20medium%20bowl%20until%20well-combined%20&%20light%20colored.%3C/p%3E%3Cp%3EAdd%20the%20sugar%20to%20the%20egg%20and%20whisk%20vigorously%20until%20thick%20and%20combined,%20about%2030%20seconds.%20Add%20the%20butter%20in%202%20or%203%20additions,%20whisking%20to%20combine%20after%20each%20addition.%3C/p%3E%3Cp%3EAdd%20the%20sour%20cream,%20whisk%20just%20to%20combine.%20Add%20the%20yogurt,%20whisk%20just%20to%20combine.%3C/p%3E%3Cp%3EAdd%20the%20mashed%20banana,%20stir%20just%20to%20combine.%3C/p%3E%3Cp%3EAdd%20the%20pomegranate%20to%20the%20dry%20ingredients%20and%20gently%20toss%20to%20combine.%3C/p%3E%3Cp%3EAdd%20the%20wet%20mixture%20and%20fold%20with%20a%20rubber%20spatula%20just%20until%20the%20batter%20comes%20together,%20about%2030%20seconds.%20Small%20spots%20of%20flour%20may%20remain%20and%20the%20batter%20will%20be%20thick,%20be%20careful%20not%20to%20overmix.%3C/p%3E%3Cp%3EGrease%20a%20large%20spoon%20or%20ice-cream%20scoop%20and%20distribute%20the%20batter%20into%20the%20muffin%20cups.%20Bake%20until%20light%20golden%20brown%20and%20a%20toothpick%20inserted%20in%20the%20middle%20of%20a%20muffin%20comes%20out%20clean,%20about%2025%20minutes.%20Rotate%20the%20pan%20from%20front%20to%20back%20halfway%20through.%20Cool%20muffins%20on%20baking%20rack%205%20minutes%20and%20enjoy.%3C/p%3E){kind=link}
