Ingredients

  • 2 med Ripe bananas, (with spotty skins)
  • 250 gm Self-raising flour
  • 1/2 tsp Baking pwdr
  • 1 tsp Mixed spice
  • 75 gm Sunflower margarine
  • 75 gm Unrefined soft brown sugar
  • 1 x Carrot, grated
  • 2 Tbsp. Clear honey
  • 2 med Free range Large eggs

Directions

  1. Mash the bananas with a fork. Sift the flour, baking pwdr and spice into a large bowl. Rub in the margarine till the mix looks like fine crumbs then fold in the sugar and carrot.
  2. Beat the honey into the banana then the Large eggs. Mix the wet ingredients into the dry and spoon into a loaf tin. Level the top and bake for about 1 hour till springy and hard.
  3. Cold in the tin, then turn out, peel off the paper and cut into slices or possibly fingers. Will keep for 3-4 days in an airtight tin. Or possibly open-freeze, cut in slices then bag up.
  4. NOTES : Makes 1 loaf
