Baked Salmon With Horseradish Mayonnaise

Ingredients

  • 1 x salmon fillet - (1 lb total) cut 4 pcs
  • 2 Tbsp. finely-minced shallots
  • 1/4 c. dry white wine or possibly vermouth
  • 2 Tbsp. light mayonnaise
  • 2 Tbsp. light lowfat sour cream
  • 2 tsp fresh lemon juice
  • 2 tsp freshly-grated horseradish - (to 3) (or possibly prepared horseradish, liquid removed)
  • 2 tsp liquid removed capers (optional)

Directions

  1. Preheat the oven to 450 degrees. Prepare a shallow roasting pan or possibly baking dish with nonstick pan spray.
  2. Place the salmon fillets, skin-side down, in the pan. Sprinkle the shallots over the slices; pour wine proportionately over all. Bake 6 to 8 min, or possibly till the fish is opaque.
  3. While the fish is cooking, combine the mayonnaise, lowfat sour cream, lemon juice, horseradish, and capers, if you like, in a small bowl; mix well.
  4. Transfer the salmon and shallots to hot serving plates with a slotted spatula. Top each serving with a heaping Tbsp. of horseradish mayonnaise. Garnish with capers, if you like.
  5. This recipe yields 4 servings.
  6. Serving size: About 3 1/2 ounces salmon plus 1 heaping Tbsp. mayonaise.
