- Preheat oven to 450.
- Arrange chicken, potatoes, onion, garlic, thyme, and lemon in 12x16" pan.
- Whisk together oil and vinegar.
- Drizzle oil mixture over chicken and vegetables.
- Toss to combine ingredients and season with salt and pepper.
- Turn chicken skin side up.
- Roast in oven until chicken is brown, ~50 minutes (uncovered).
