Baked Chicken with Thyme, Onion, Garlic, and New Potatoes

Easy chicken dish thats full of flavor! Your guests will think you cooked for hours!

Ingredients

  • 1 whole chicken, cut into 8 pieces or pre-cut chicken can be used
  • 1 lb white new potatoes, halved
  • 1 large red onion, cut into eighths
  • 1 head of garlic, cloves seperated and unpeeled
  • 6 sprigs of thyme
  • 1 lemon, quartered
  • 1/4 c EVOO
  • 2 Tbsp balsamic vinegar
  • Salt and Pepper to taste

Directions

  1. Preheat oven to 450.
  2. Arrange chicken, potatoes, onion, garlic, thyme, and lemon in 12x16" pan.
  3. Whisk together oil and vinegar.
  4. Drizzle oil mixture over chicken and vegetables.
  5. Toss to combine ingredients and season with salt and pepper.
  6. Turn chicken skin side up.
  7. Roast in oven until chicken is brown, ~50 minutes (uncovered).
