Ingredients

  • 1 can crushed pineapple small can (original was 1 c. oil)
  • 1 tsp baking soda
  • 1 1/2 tsp baking pwdr
  • 1 c. sugar
  • 2 tsp cinnamon
  • 2 tsp vanilla
  • 3 x Large eggs or possibly 3 egg whites
  • 1/2 c. skim lowfat milk
  • 1 c. starter
  • 1 lrg vanilla pudding mix (instant)
  • 2 c. flour
  • 1 tsp salt

Directions

  1. Mix well with wooden spoon. Bake at 325 for one hour in two loaf pans.
  2. I have tried all sorts of substituions. like lemon pudding and poppyseed, leave out the cinnamon, use butter flavoring
  3. butter pecan pudding and butterscotch chips, leave out cinnamon
  4. chocolate pudding and peanutbutter chips, leave out cinnamon
  5. add in fresh apple to original recipe [Judy]
