Tamale PieThis is one of my comfort foods for a cold winter day. This is a mildly spicy dish. If you are not into a little heat, or are serving this to kids, you may want to reduce the amount of ground peppers and eliminate the crushed red pepper in the cornmeal topping. |

Italian DressingI have not found many bottled salad dressings I like. This lead me to search out something I can make myself and this is what I put together from various sources. I like my dressings tart so I normally don't add any sugar. If I am serving this to company, and want to tone down the acidity, I add a little bit of sugar. This is… |

Oven BBQ ChickenIt was a dark and stormy night….NO, NO, NO!! Sorry, I just started my last diatribe with that line but it’s still winter and the ice where my wife and I park our cars is so slick there are days we put on ice cleats to just to walk to the bridge that leads to our front door. What’s a person to do when the old BBQ is covered with… |

Southwestern Beef & Hominy SoupThis is a hearty soup that only takes about 1 hour from start to finish. I started looking at a Pork Posole recipe but did not have the time to thaw, cube, and brown the pork, but I did have a pound of ground beef in the fridge. Braised Lamb ShanksIt was a dark and stormy night….well, it snowed about 1 foot last night, and I was in the mood for a warm hearty stew. As soon as I saw this treat I decided on a braise… |

Pork & Pinto Bean SoupThis is a spicy, warm up your mouth kind of soup I put together on our first day of snow here in North Idaho. I normally don’t use brand name ingredients in my recipes, but in this case I think they create a flavor I’m not sure I could easily duplicate without them. This is great on a cold winter day but I bet it would be just as… |

Beef MarinadeI love to grill during the summer and one of my favorite meats to grill is a tri-tip roast. At first the ingredients didn't sound very good but I gave it a try anyway. Was I wrong! This is one of the best marinades I have used. I have also used this with country style pork ribs and it was excellent with them also. |

Pork PosoleAn easy, rich, posole. I call out canned enchilada sauce, but if you have time to make one from scratch the posole is even better. |
